Hey there! I’m Kristin—the owner, baker, and the one wearing all the hats behind Gluten Free in the 303.

After attending culinary school for baking and pastry, I was diagnosed with a wheat allergy and told I needed to go gluten free. Once I made the switch, my stomach and skin issues drastically improved and it completely changed the way I approached baking.

Not long after, our journey became even more personal when my daughter was diagnosed with a dairy allergy. One day at a coffee shop, we realized the dairy-free option contained gluten, and the gluten-free option contained dairy—leaving her with nothing she could safely enjoy. In that moment, I knew I wanted to get our products into more coffee shops so no other kid would have to sit there feeling left out like mine did.

I’ve now been baking professionally for over 13 years, and in 2024, I started Gluten Free in the 303 out of my small two-bedroom apartment with one goal: to create delicious gluten and dairy free treats that people could truly enjoy without feeling like they were missing out.

As things grew, I began renting a commercial kitchen space in Colorado Springs to offer wholesale products. That meant driving from Aurora to Colorado Springs and baking from 10PM to 7AM—twice a week—to fulfill orders and events. Call me crazy—but I did what I had to do to bring safe, high-quality baked goods to the community.

In September 2025, I found the perfect space to open a brick-and-mortar bakery in Trinidad, Colorado. Taking that leap was a big moment, and it’s allowed us to grow even more.

Today, we deliver weekly to our wholesale partners in Parker and Aurora, take custom orders, and continue to be part of events like those hosted by the Denver Celiacs—including the dedicated gluten free farmers market that helped us grow in the early days.

This journey has been a wild ride, and we’re so grateful for the incredible gluten free and dairy free community that has supported us along the way.
